To say “except” in Spanish, you will say menos followed by what you want to exclude.

Here are some examples:

En la fiesta, hablé con todos menos con Juan.

At the party, I talked to everyone except Juan.

Puedes venir a vernos cualquier día, menos los lunes.

You can come and see us any day except Mondays.

Es algo muy difícil para todos los niños, menos para él.

It is a very difficult thing for all children, except for him.

Please note that if you want to use pronouns then you can only use subject pronouns (yo/tú/él/ella/usted/nosotros/vosotros/ellos/ellas/ustedes)

Todo el mundo lleva gafas menos yo.

Everyone wear glasses except me.

You can also use “salvo” or “excepto” instead of “menos” if you want to.

Menos” is the most used form however.

Voy a tirar toda mi ropa, salvo esta falda.

I’m going to throw away all my clothes except this skirt.

Voy a tirar toda mi ropa, excepto esta falda.

I’m going to throw away all my clothes except this skirt.

If you want to say “except that” then you will have to use “salvo que” or “excepto que“.

Poco se sabe sobre el nuevo novio de Juana, salvo que es médico.

Little is known about Juana’s new boyfriend, except that he is a doctor.

Disfruté el concierto, excepto que el pasillo estaba frío.

I enjoyed the concert except that the hall was cold.

You cannot use “menos que“.
